Programme overview
This hands-on 4-week course is designed for food enthusiasts who want to master the art of cooking traditional curries. Each week, we will focus on a different type of curry—Chicken, Daal, Paneer, and Fish—learning the essential techniques, spice blends, and cooking methods. Participants will prepare their own dishes from scratch, gaining confidence in balancing flavours and achieving authentic South Asian flavours and textures. This course is suitable for beginners and experienced home cooks alike, with an emphasis on practical cooking skills, spice knowledge, and cultural insights.
Programme content
Week 1 - Chicken curry (rich and aromatic)
- introduction to essential curry spices (turmeric, coriander, cumin, coriander, garam masala, and so on)
- understanding different types of curry bases (onion-tomato, coconut, yoghurt-based)
- cook a traditional Bangladeshi curry
- grind your own spices
Week 2 - Traditional Daal (lentil curry)
- introduction to Bangladeshi daal and its importance in daily meals
- exploring spice blends specific to lentil curries (cumin, turmeric, mustard seeds, and bay leaves)
- hands-on cooking: Preparing a simple, yet flavour-packed traditional daal
- cooking tips: Making the perfect Bhagar (tempuring)
- discussion on the variety of lentils used in Bangladeshi cooking
Week 3 - Paneer curry (vegetarian delight)
- understanding vegetarian curries and how to enhance depth of flavour
- cooking with Indian cheese
- exploring dairy alternatives for vegan-friendly options
Week 4 - Fish curry (light and fragrant)
- exploring Bangladeshi fish
- cooking tips: preventing fish from overcooking, balancing tangy and spicy flavours

This course is suitable for anyone interested in Asian cuisine.
Experience and knowledge needed
No prior experience is needed for this course.
Materials and equipment
We will provide all equipment and the ingredients for the first week. You will be given a list of ingredients to bring each week for weeks two to four.
Assessment
You will be assessed very informally. This will be done in by observation and conversation with your tutor on a regular basis and will also be written on your weekly individual learner plan journal. Feedback and ways to improve your work will be given very regularly and positively.
